Celebrity chef hosts Manchester's original cooking experience
Since 2007 Ning has pioneered cookery classes in Malaysian food, hosted in our beautiful restaurant in Manchester’s Northern Quarter. Now for the first time we bring you a series of exciting themed masterclasses with our very own celebrity chef Norman Musa.

Showcasing the amazing diversity of delicious Malaysian cuisine, you will learn how to cook some of Malaysia’s most distinctive and iconic dishes found on the streets and in the homes of different parts of this multicultural country. Preparing and cooking from scratch, Chef Norman will guide the novice to experienced alike in developing your knowledge and techniques in a culinary adventure.

Expect a culinary adventure on each class
Each class will take place on a Saturday (so no early Sunday mornings involved!) in our restaurant and kitchen and will involve a minimum of starter, main course and dessert. You will be able to enjoy expert, friendly tuition from Chef Norman and his team; enjoy your cooking afterwards with wine/beer or non-alcoholic drink and get to take some of it away too if you wish; and receive a full pack of recipes, background reading and starter spice pack. Plus you will have the opportunity to buy Norman’s book at an exclusively discounted price and buy the essential ingredients to get cooking at home. Malaysia’s heritage is fascinating – from Arab and Indian traders to Chinese immigrants to Portuguese colonists, the peoples of Malaysia are not only Malay. The resulting melting pot of cuisine makes it difficult to pin-down uniquely Malaysian dishes. So in the first theme of the year, Chef Norman builds on his research of Malaysia’s some 6,000 recipes to highlight some notable distinctively Malaysian dishes from its past. This class will give you a real insight into essential flavours and traditional techniques of Malaysian food that have stood the test of time.Provisional menu:

Masterclass 2: Malaysian Street Food

Street food in Malaysia is a foodie’s heaven. Seriously great, affordable food can be had on the streets of every town and village. Penang, Norman’s home state, is the capital of Malaysia’s street food and it is the passion of the streets of Georgetown in particular that Chef Norman will bring to life in this class. A unique opportunity, this class will take place in his kitchen and will involve a master class in wok techniques using our wok range. This is a real art and understanding it will really transform your stir-fries and fried noodle dishes. Masterclass 3: Malaysian Nyonya Cuisine
Choice of dates: Saturdays 27 Oct, 10 Nov or 24 Nov 2012, 10am to 2.30pm

‘Nyonya’ cuisine is unique to Malaysia and Singapore, representing the distinctive heritage of Chinese immigrants who inter-married with local Malays. Originating in the historical city of Melaka in south west Malaysia, this fusion of Chinese, Malay and Portuguese influences dates back to the 16th Century when the Portuguese colonized this part of the region. A dying culinary art, interest is growing back in Malaysia to rejuvenate this wonderfully flavoursome food and Chef Norman’s research will demonstrate how delicious it is. From the sweet and soury ingredients, the historical influences to the specific techniques in cooking, you will be treated to what’s probably the UK’s only masterclass in this style of cuisine.
